Avocado Guacamole

 

Cullen's Mayo Guacamole Salad

 

3 med tomatoes (or 4)
2 lrg ripe avocados
1/4 cup chopped onion
1 x green chili pepper
    seeded and chopped fine
1/2 x clove garlic minced
3 tbl mayonnaise or salad dressing
3 tbl lemon juice
1 tsp Worcestershire sauce
1/4 tsp salt
    Lettuce leaves

 Method :
Halve tomatoes crosswise; scoop out pulp into a small bowl and save. Set aside the tomato shells. Peel avocados; halve and remove pit. Mash with a fork in separate bowl. Stir in tomato pulp and remaining ingredients, except lettuce. Spoon into tomato shells. Arrange tomatoes on a lettuce-lined platter. Serve with corn chips if desired.
Makes 6-8 servings.
