Avocado Soup & Stew

 

Cullen's Cold Avocado Whipped Cream Soup

 

3 med ripe avocados
1 cup whipping cream
3 cup chicken stock
    salt and pepper to taste
1 tbl granulated sugar (optional)
1/2 cup lemon juice
Garnish:
    sour cream or cream
    chives trimmed
    green onions, peeled and thinly sliced

 Method :
Remove skin and pits from avocados. Process in processor or blender until smooth. Add cream and pulse for several seconds or until smooth. Add stock, salt and pepper, sugar, and lemon juice to taste. Process until smooth. Serve chilled topped with a dollop of sour cream or, cream and chopped chives or sliced green onions. If served warm, heat gently.
Note: Two sliced green onions, or 1/4 cup chopped chives, can be added with the stock, if desired. Attention: Avocado soup should be served as soon as possible. Even though this contains lemon juice, it will eventually discolor.
