Avocado Soup & Stew
Shanna's Avocado Salsa Herb Soup
1 tbl vegetable oil
1 med red onion, chopped
2 clv garlic, minced
1/2 x red bell pepper, chopped
4 x avocado, diced
1 x 19 oz can stewed tomato, diced
1/2 cup chopped fresh parsley
1/2 cup chopped fresh coriander
1/4 cup chopped fresh mint
1/4 cup chopped fresh oregano
1 x jalapeno pepper, chopped, (optional)
1 tbl lemon, juice
1/2 tsp salt
1/2 tsp black pepper
1 x bay leaf
6 cup vegetable stock
1/4 cup chopped fresh chives
Method :
In a large soup pot, heat the oil. Saute the onion and garlic for 2 minutes. Add
the red pepper; saute for another 2 minutes.
Add avocados, tomatoes and their juice, parsley, coriander, mint, oregano,
jalapeno pepper, lemon juice, salt, black pepper, bay leaf and stock. Bring to a
boil; reduce heat and simmer, stirring occasionally, 20 minutes.
Remove the bay leaf. Garnish with chives and serve.
