Kat's Texas Pone

4 cups water-ground cornmeal
1 tsp salt
Boiling water

Combine cornmeal and salt, dampen mixture with boiling water and let stand. add more boiling water to make a stiff dough. Work by hand, then mold into oval pones about 8 inches long and 1 inch thick. Heat a 16 inch iron skillet over moderate flame and add lard to about1/8 inch thick. Add pones cook 1 min; baste top of pones with lard from skillet. Slip pan into 400 F oven and bake until golden
brown . Makes 6 -8 depending on size.
