Shanna's Fresh Crab Cheese Brown Rice Casserole

 

2 tbl vegetable oil
1 cup sliced celery
1/2 cup sliced onions
1/2 cup thinly sliced carrots
1/2 cup sliced mushrooms
1/4 cup diced green pepper
1 x (28-ounce) can whole tomatoes, drained
1 1/2 cup fresh or frozen flakes crabmeat
1 cup cooked brown rice
1 x bay leaf
1/2 cup (2-ounce)s) grated sharp cheddar cheese
1/4 tsp salt

 Method :
Heat oil in Dutch over or other oven proof fish. Saute celery, onion, carrot, mushroom and green pepper until onion is transparent. Add remaining ingredients, except cheese. Let simmer 5 minutes. Remove bay leaf. Sprinkle with cheese. Bake 20 minutes at 350 F. Serve over noodles. 6 Servings
