Crab Casseroles

 

James's Canned Crabmeat Pepper Crackers Casserole

 

1 can crabmeat (7-ounce)
1 cup soft bread crumbs
2 x hard-boiled eggs mashed
1 1/2 tsp vinegar
1 tbl Worcestershire sauce
1 tbl chopped onion
1 tbl chopped green pepper
2 tbl butter melted
    Salt and pepper to taste
1 x egg separated
4 tbl butter
2 cup coarsely crushed saltine crackers
    Paprika

 Method :
Combine crab, bread crumbs, hard-boiled eggs, vinegar, Worcestershire, onion, green pepper, the 2 tablespoons melted, salt, pepper and the egg yolk. In a separate bowl, beat the egg white until stiff, then fold into crab mixture. Spoon mixture into a greased 1 1/2 quart casserole. Melt the remaining 4 tablespoons butter. Add saltine crumbs and stir to coat well. Spoon crumbs around edge of casserole and sprinkle with paprika. Bake at 350 degrees for 40-45 minutes, or until lightly browned.
