Kat's Squash Fritters

1/3 C. biscuit mix 
1/4 C. grated Cheddar or Mozzarella cheese 
1/2 Tsp. salt 
1/2 Tsp. pepper 
2 eggs -- slightly beaten 
2 C. shredded raw zucchini or yellow squash melted butter 

Combine biscuit mix with cheese, salt and pepper. Stir in eggs just until mixture is moist. Fold in squash. Using about 2 tablespoons butter per fritter, saute fritters until brown on both sides. Makes about 12 (3-inch) fritters.

Honest criticism is hard to take, particularly from a relative, a friend, an acquaintance, or a stranger.
