Leg of Goat
1 small leg of capretto
2 tsp minced garlic
2 tbsp butter
2 tsp finely chopped fresh
rosemary leaves
1 tablespoon balsamic vinegar
Mix garlic, butter, rosemary and vinegar into a paste. Puncture leg in
several places and
force paste into holes. Rub remaining paste over the surface of the leg.
Roast in 220° c oven for about 45 minutes, depending on size.
Let stand for 20 minutes before serving. Serve with green salad.
