Kat's  Goat on a Spit

1 whole goat
olive oil
oregano
salt and pepper
7 lemons

Mix olive oil, oregano, salt and pepper in bowl. Cut up 6 lemons, put into goat,
 brush mixture inside then sew up. Brush outside with a herb brush dipped into mixture.

Brush regularly while cooking. Just prior to serving, squeeze a lemon on and around the roast.

HERB BRUSH: Branches of oregano, rosemary and parsley tied together with twine.

It is an illusion that youth is happy, an illusion of those who have lost it.
