Granny's
Veal Loaf
31/2 lbs chopped fine boneless shoulder of veal (do not grind)
!/8 lb salt pork diced very fine
1/4 cup chopper celery
2 tbs minced celery leaves
1/2 cup fine cracker crumbs
1/3 cup melted butter
2 eggs beaten lightly
Salt & Pepper
2 tbs rubbed sage
Additional fine crumbs for topping
Combine all in bowl. Blend by hand. Packed into a large greased loaf pan.
Sprinkle top with
additional fine crumbs. Cover pan with double foil and seal edges. Bake @ 325F
for
2 hours, uncover. Cook for 20 mins more. Let stand at room temperature for 20
min.
