Kat's Vegetable Soup Meatloaf

1 1/2 to 2 pounds ground beef, lean 
1 can condensed vegetable soup (10 ounce) 
1 egg, beaten 
1/2 cup fine bread crumbs or 2 or 3 slices of bread, shredded 
1 medium onion, finely chopped 
1 tablespoon prepared mustard, optional 
1 teaspoon salt, or to taste 
1/4 teaspoon black pepper 
finely chopped green pepper, if desired 
Mix all ingredients together gently; shape into a loaf. Place in a shallow baking dish and bake for 1 to 1 1/2 hours, or until done. 
Serves 6 to 8
