Meatloaf
Cullen's Pork Tamale Loaf
3 slices bacon, finely diced
11/2 lbs ground pork
1/2 cup chopped onions
1 can tomatoes # 2 size
1 cup chicken broth
11/2 cup cornmeal
11/2 cups whole kernel corn
3 eggs, beaten
Salt & pepper
1 tbs ground comino
1 tsp paprika
4 tsp chili powder
In skillet sauté bacon until almost crisp, Add pork and onion. Cook,
stirring frequently until pork
is browned. Add tomatoes and broth and bring to a boil. Gradually sprinkle in
cornmeal.
When blended, remove from heat and stir in remaining ingredients. Pack evenly
into a large greased loaf pan. Bake @ 325 F for 11/2 hours. Let stand in pan 15
mins before turning out.
