Meatloaf
Granny's East Coast Meatloaf
2 large eggs
1/2 cup finely chopped onion
1/2 cup finely chopped green bell pepper
1/4 cup ketchup
1/2 cup crushed saltines, about 10 crackers
1 tbs Worcestershire sauce
salt & pepper
2 pounds ground beef
Preheat the oven to 400*F (205*).
In a bowl whisk together egg, onion, bell pepper, 2 tablespoons of ketchup,
saltines, Worcestershire sauce, salt, and pepper; add beef and blend mixture
with your hands until it is just combined.
Form the mixture into loaf in a shallow baking pan,
Bake meat loaf for 30 minutes.
Feeling crazy may be a mark of sanity in my situation.
