Tex Mex Enchiladas

 

Granny's Lamb Enchiladas

 

2 pds lean ground lamb  
1/2 tsp minced garlic
2 tbs oil            
 11/2 cups water
3 tbs chili powder   
2 tbs flour
salt and pepper   
20 corn tortillas
1 onion minced   
1/2 tsp cumin
To taste; picante 
1 pd Cheddar cheese grated

Brown meat in oil. Add chili powder and spices. Mix water with flour and add to 
mixture. Soften tortillas in oil, place 2-4 tbs meat sauce in tortilla and fill with
cheese and onion; roll up and place in 9x13 baking dish. pour remaining meat sauce
over top enchilada bake @ 300 for 30 min
