Kat's Bob's Fayetteville's Sausage Sage Dressing

 

Step 1:  Dry ingredients.  This can be done two days before serving.

Make one pan of cornbread.  Mix 8 ½ ounce box of Jiffy corn muffin, 1 egg, 2 tablespoons of Mazola oil, and ¾ cup of milk.  Use your finger to grease with a little olive oil the bottom and sides of an 8” by 8” pan.  Pour the mix in pan and bake for 23 to 27 minutes in a preheated 400 degree oven.  When it looks brown on top and bread expands to separating, let the pan cool.  If bread didn’t rise, try again.

Pulse the cornbread and 6 slices of toasted white or wheat bread until fine in a food processor, or use a knife and your fingers.  Combine breads in a large pan.  Add:

Salt and pepper (approx 1 teaspoon each), 

3 1/2  tablespoons of sage,

3 1/2 tablespoons of chicken fajita seasoning from HEB Texas Spice Company,

3 teaspoons Cumin,

½ tablespoon all-purpose or poultry seasoning, 

 

Step 2:  Liquids.   

½ cup onion and 1 cup celery chopped fine,

1 cup water.  Boil slowly with lid off until water is almost gone, and celery and onions look tender.  In a large bowl, mix with

1 can celery soup,

1 can onion soup,

4 well beaten eggs.   

Place in a covered pan 3 turkey necks, ½ can of turkey broth, 1/3 onion, and 1/2 green pepper.  Boil until done.  Separate residue and augment turkey broth until you have a ½ cup of broth.  Cut turkey meat into giblets.  Add giblets and broth to the liquids.   

 

Steam ½ ear of corn until near cooked.  Add the corn to liquids.  

7 inches of smoked pork and venison sausage.  Depends on what part of the country you are from.  Brenham , Texas has several choices. Must be smoked or you have to cook thoroughly.  Separate from its wrapper, cut into small pieces, and mix into liquids.  

Grease a casserole dish with olive oil.  Combine ingredients, mix, pour into casserole, slide casserole into preheated oven at 335 degrees, and bake without a lid 35-45 minutes until the lightly brown on top.  Don’t overcook.   Use broth to moisten when reheating.  Can be refrigerated once, but make sure it is completely cool before freezing.  Two dishes work more evenly (package of six necks, 1 ear of corn, and 1 green pepper).  The second day the dressing is hotter, so you may want to use 2 ½ tablespoons of the Fajita seasoning, but people seems to enjoy it hot.
