Tex Mex Sauces
Salsa

 

Kat's Pear Salsa

3 tbs Vegetable oil 
1 med Onion, chopped 
1 Green pepper, chopped fine 
1 Garlic clove, chopped fine
3 tbs Finely chopped parsley 
2 tesp Lemon juice 
 Salt 7 pepper
 2 tbs Chopped fresh oregano OR 1 ts Dried oregano 
2 tbs Chopped fresh basil OR 1 ts Dried basil 
1 tesp Tabasco sauce 
2 med Tomatoes,  chopped Coarse 
3 pears, peeled & chopped

Heat oil in medium pan. Saute onion until tender, about 3 to 4 minutes. Add green pepper, garlic, parsley, lemon juice, salt, oregano, basil and Tabasco sauce; cook 2 minutes. Remove pan from heat and stir in tomatoes and pears. Cover and refrigerate. Make 5 cups.
