Tex Mex Sauces
Salsa
Lynn's Bananas Salsa
2 lg Bananas
1/2 c Diced red bell pepper
1/2 c Diced green bell pepper
2 Jalapenos, seeded and minced
1 tbs Fresh ginger, minced
3 Scallions, trimmed and
-finely chopped
1/4 c Chopped cilantro leaves
3 tbs Fresh lime juice
2 tbs Packed light brown sugar
1/4 tesp Ground cardamom
1 tbs Olive oil
Salt and pepper
Combine all of the ingredients in a mixing bowl, and gently toss to mix.
Correct the seasonings, adding salt, lime juice, or sugar, to taste. The salsa
should be a little sweet and a little sour. Best when served a couple hours
after making. Cover and refrigerate until serving time.
